for humnan i'd say paladin and death knight... they just fit their story, and they have mace specialization.
Night elf: druid or rogue. Rogue coz they have the nice ability called shadowmeld.
Dwarf: definately warrior.
Gnome: mage or warlock coz they have more intelect
Draeei: Shaman
Orc: warrior and shaman
Undead: rogue and lock
Tauren: druid and warrior
Troll: rogue and hunter
Belf: Mage and pala
